Kitten Rescued After Falling In Gutter (Video)

So when this helpful cat lends a helpful paw to her sister by babysitting her 10-day-old-kitten, it’s not totally surprising that everything doesn’t go according to plan! The little kitten managed to fall down the gutter but thankfully, his babysitter was able to fish the kitten out completely unharmed.

Mom’s Easy Macaroni Salad

When it’s hot, cooking has to be at a bare minimum, right? This quick and easy macaroni salad with hard boiled egg, roasted red bell pepper, onion, mayonnaise, and paprika gives new life to your standard issue picnic macaroni salad!

When you have a week straight of over 100°F temps, you start looking for cooler things to make. My mother makes this macaroni salad all summer long. She whipped up a batch earlier this week and I think I ate half of the bowl.

Think macaroni and deviled egg have a love child, and you’ll be in the vicinity of this macaroni salad. There is a hard boiled egg, some roasted red bell pepper, chopped spring onions, a generous amount of mayo, and seasoning with sweet paprika. It’s a perfect salad for a summer BBQ or picnic.

TIP: ADD ROASTED RED PEPPERS

Roasted red peppers aren’t a typical addition to macaroni salad, but trust me, they’re great! They add a sweet, lightly smoky flavor, making this macaroni salad deliciously unique.

There are two ways of going about obtaining roasted red peppers for this salad. You can buy them, or you can make them:

  • Store-bought roasted red peppers: Many retailers, Trader Joe’s included, carry jarred roasted red bell peppers packed in oil and vinegar. We usually use these in recipes calling for roasted bell peppers.
  • Roast your own: Alternatively, you can roast a fresh bell pepper by blackening it over an open flame on a gas range or broiling until the skin blisters on all sides. Remove from heat source, place in a bowl, cover the bowl, after a few minutes remove from the bowl and scrape off the blackened bits. Discard seeds and stem. Suggestions and Substitutions for Macaroni Salad

  • Swap out the macaroni for fusilli, ditalini, cavatelli, orecchiette, or any small-shaped pasta
  • Add chopped pickles or pickle relish (you can also put some pickle juice in the dressing!)
  • For some crunch, swap the roasted red peppers with fresh red bell peppers
  • For even more crunch, add chopped celery
  • Swap the spring onions or green onions for shallots or red onions (soak them in a little water with lemon juice or vinegar for a few minutes to soften their bite)
  • Add fresh or frozen peas
  • Add diced cooked chicken, ham, bacon, shrimp, or tuna for a heartier salad

This recipe serves four, but is easily doubled or even tripled for a larger party. Just scale all the ingredients up.

How Long Does Macaroni Salad Keep?

Macaroni salad is best served the same day it’s made. If you’re serving this at a picnic, be sure to only let the salad sit out for a maximum of two hours.

Refrigerate all leftovers; the leftovers will get a little dried out, but will still be good for 2 to 3 days. We do not recommend freezing this salad.

Mom’s Easy Macaroni Salad Recipe

Prep the ingredients while the pasta water is coming to a boil.

This recipe can easily be doubled or tripled.

Ingredients

  • 2 cups (about 1/2 pound) dry macaroni pasta (use rice or gluten-free pasta for gluten-free version)
  • Salt
  • 1/4 cup chopped spring onion or green onion
  • 1/2 teaspoon lemon juice or vinegar
  • 1 hard boiled egg, chopped
  • 1 roasted red bell pepper, chopped
  • 1 tablespoon fresh chopped parsley
  • A generous amount of mayonnaise (1/3 to 1/2 cup)
  • Several pinches of paprika
  • Freshly ground black pepper to taste

Method

1 Cook the pasta: In at least 2 quarts of salted water (1 1/2 teaspoons of salt per quart of water), cook the pasta according to package directions until al dente—still slightly firm. Remove from heat, drain and rinse with cool water until the pasta reaches room temperature.

2 Soak the onions: While macaroni is cooking, put the chopped onions into a small bowl and sprinkle the lemon juice or vinegar, and a little water over them. This will take the edge off the onions.

3 Assemble the macaroni salad: Combine cooked macaroni, onions, and all other ingredients in a large serving bowl. Adjust seasonings to taste.

We all are in love with those sly gorgeous foxes, but we’ve never seen their bellies rubbed to the point where their facial expressions radiate with pure delight!

It’s certainly a recipe for a contagious smile. We’re still smiling just thinking about their smiles!

The foxes featured in this video go by the name Finnegan, Dixie, and Vixie.

Toshi was born with paralyzed back legs due to his fractured spine, and as a result of that, the shelter Toshi was placed in had preparations to euthanize the little darling after he was a few weeks old. 

Toshi’s savior, Trisha Torres, heard about his story and decided to foster him. Torres made Toshi a home-made drag bag which turned him into the little purrmaid! 

And it wasn’t long before little Toshi found a forever-loving-home. Wishing you the best, little Toshi!

How to Make Eggs Benedict

1 Cook the bacon: Heat a large skillet on medium low heat. Add the strips of bacon or the slices of Canadian bacon. Slowly fry, turning occasionally, until the bacon is browned on both sides, and if using strip bacon, much of the fat is rendered out (about 10 minutes).

Use tongs or a fork to remove the bacon from the pan, set on a paper towel to absorb the excess fat.

Don’t pour the bacon fat left in the pan down the drain! Either sop it up with paper towels when it has cooled a bit, or pour it into a jar to be used later (see rendering bacon fat).

2 Bring poaching water to a simmer: While the bacon is cooking, bring a large saucepan two-thirds-filled with water to a boil, then add the vinegar. Bring the water to a boil again, then lower the heat to a bare simmer.

3 Make Hollandaise sauce in blender: To make blender hollandaise, melt 10 Tbsp unsalted butter.

Put 3 egg yolks, a tablespoon of lemon juice, 1/2 teaspoon salt in a blender, blend on medium to medium high speed for 20-30 seconds, until eggs lighten in color.

Turn blender down to lowest setting, slowly dribble in the hot melted butter, while continuing to blend. Taste for salt and acidity and add more salt or lemon juice to taste.

Transfer it to a container you can use for pouring and set it on a warm—but not hot—place on or near the stovetop.

4 Poach the eggs: Here is an easy method for poaching eggs. Essentially, working one egg at a time you crack an egg into a small bowl and slip it into the barely simmering water. Once it begins to solidify, you can slip in another egg, until you have all four cooking.

Turn off the heat, cover the pan, and let sit for 4 minutes. (Remember which egg went in first, you’ll want to take it out first.) When it comes time to remove the eggs, gently lift out with a slotted spoon.

Note that the timing is a little variable on the eggs, depending on the size of your pan, how much water, how many eggs, and how runny you like them. You might have to experiment a little with your set-up to figure out what you need to do to get the eggs exactly the way you like them.

5 Toast English muffins: As soon as all the eggs are in the poaching water, begin toasting your English muffins. If you can’t get all the muffins toasted by the time the eggs are ready, gently remove the eggs from the poaching water and set in a bowl.

6 Assemble your Eggs Benedict: To assemble, butter one side of an English muffin. Top with two slices of bacon or 1 slice of Canadian bacon. You can trim the bacon to fit the muffin if you’d like.

Put a poached egg on top of the bacon, then pour some hollandaise over. Sprinkle some parsley over it all and serve at once.

Easy Blender Hollandaise Sauce

Here’s a quick and easy version of the classic French hollandaise sauce made in a blender. Read for eggs benedict in 10 minutes!

Many people are afraid of hollandaise sauce, are you? Some think eating it will make them fat. (It will if you eat it every day, so don’t eat it every day.)

If you are like me, the thought of making hollandaise conjures up visions of toque clad chefs with big bowls and even bigger whisks swearing because the beautiful sauce they have spent the last several minutes vigorously whisking has separated on them, “Merde!”

I have been desperately afraid of making this sauce since forever. (Not afraid of eating it mind you, I’ve never met an Eggs Benedict I didn’t like, or eat.) To overcome this fear I asked my friend Hank to show me how to make it.

OMG. Hank’s hollandaise didn’t separate, and he didn’t swear (any more than usual), but the work! The beads of sweat forming on this man’s forehead as he whipped those egg yolks and butter into submission.

I was dreading the attempt. Hank has arms of steel. I have arms of, hmmm, a young, willowy sapling? Whatever. Not steel.

The solution? Blender hollandaise. It’s easy! Even I can do it. Which means even you can do it. So I encourage you to try it, if you like me have been intimidated by the thought of attempting this sauce.

Use it over fish, steamed vegetables like broccoli or asparagus, or on top of poached eggs, bacon, and English muffins for Eggs Benedict.

Easy Blender Hollandaise Sauce Recipe

Ingredients

  • 10 tablespoons unsalted butter (if using salted butter, skip the added salt)
  • 3 egg yolks (see how to separate eggs)
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/8 teaspoon cayenne (optional)

Method

1 Melt the butter: Melt the butter slowly in a small pot. Try not to let it boil—you want the moisture in the butter to remain there and not steam away.

2 Blend egg yolks, lemon juice, salt, until lightened in color: Add the egg yolks, lemon juice, salt and cayenne (if using) into your blender. Blend the egg yolk mixture at a medium to medium high speed until it lightens in color, about 20-30 seconds.

The friction generated by the blender blades will heat the yolks a bit. The blending action will also introduce a little air into them, making your hollandaise a bit lighter.

3 Lower blender setting, slowly drizzle in melted butter: Once the yolks have lightened in color, turn the blender down to its lowest setting (if you only have one speed on your blender it will still work), and drizzle in the hot melted butter slowly, while the blender is going.

Continue to blend for another couple seconds after the butter is all incorporated.

4 Adjust salt and lemon juice to taste: Turn off the blender and taste the sauce. It should be buttery, lemony and just lightly salty. If it is not salty or lemony enough, you can add a little lemon juice or salt to taste.

If you want a thinner consistency, add a little warm water. Pulse briefly to incorporate the ingredients one more time.

Store until needed in a warm spot, e.g. next to the stovetop. Use within an hour or so.
