Let’s get a few things out of the way up front: these are NOT dry scones. I just can’t get into any scone that is dry. I don’t want to dunk it into tea or coffee, I want it to be moist and delicious all on it’s own. So after much re-jiggering to a few traditional scone recipes… here we are!

Scones are one of those easy indulgences that make me happy. There are 2 tricks to making scones. First – grating the butter. You’ll need ice cold butter for this recipe and then you’ll grate it up on a box shredder and then fold it into the dry ingredients! That way the butter is evenly distributed throughout the scones and each bite it perfect.

The second tip is all about forming the scones. I’m a drop scone kinda gal – which means after you make the dough, you just drop balls of it into a baking sheet and stick it into the oven. I’m not into rolling the dough out, cutting perfect triangles and then baking them because that’s an extra step between baking and eating these Strawberry White Chocolate Scones and that is way too much work for me!

And if you don’t have fresh strawberries on hand, you can easily substitute any other berry you prefer: raspberries, blueberries, blackberries etc.

Ingredients

  • 2 cups flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 2 tbsp sugar
  • 5 tbsp unsalted butter, cold, grated into small pieces
  • 1 1/2 cup heavy cream
  • 1 cup chopped strawberries
  • ½ cup white chocolate chips or chunks

For the Glaze

  • 1/4 cup freshly squeezed lemon juice
  • 1 cups powdered sugar, sifted
  • 1/2 tablespoon unsalted butter, melted

Instructions

  • Preheat the oven to 400 degrees F.
  • Combine the flour, baking powder, salt, and sugar and gently whisk together. Add the grated cold butter to the dry mixture and toss to combine so the butter is evenly distributed.
  • Fold the strawberries into the dry mixture along with the white chocolate chips. Make a well in the center and pour in the heavy cream. Fold everything together just to incorporate; do not overwork the dough.
  • Form 12 medium sized mounds out of the dough. The size can vary depending on if you want to stretch the recipe to make more. Arrange them on a parchment lined baking sheet and bake in the pre-heated oven for 16-20 minutes, or until the top just barely turned golden brown.
  • Combine the lemon juice, powdered sugar and melted butter in a small bowl and whisk until no clumps remain. Once the scones have cooled, drizzle with the glaze and let cool.

Many moons ago when I was the pickiest eater on the planet, I vividly remember going to France one summer with my family and not eating ANYTHING besides Alsatian Pizza. It’s basically just a pizza loaded with tons of caramelized onions and gruyere cheese! Occasionally there’s bacon too because that just feels right! It’s incredible and makes for an excellent first course / snack / appetizer that feeds a crowd. It’s rich and decadent but don’t take much time to make other than the caramelized onions.

My take on that incredible Alsatian Pizza that dominates France but instead of a pizza crust – PUFF PASTRY!!

Ingredients

  • 1 package frozen puff pastry, thawed. (17.5 ounce)
  • 2 large yellow onions (about 1 pound), peeled and sliced into 1/4 in slices
  • 2 tablespoons unsalted butter
  • 3 tablespoon olive oil, divided
  • Kosher salt and freshly cracked black pepper to taste
  • 1 teaspoon fresh thyme, leaves only
  • 4 ounces gruyere cheese, shredded
  • 4 ounces fontina cheese, shredded
  • 4-6 sliced prosciutto
  • freshly grated nutmeg

Instructions

  • Heat butter and 1 tablespoons of olive oil a large dutch oven over medium high heat. Add in the sliced onions and season with salt and pepper. Cook, stirring occasionally, for 15 mins uncovered. Reduce heat to medium and cook another 10 minutes stirring frequently. Drop heat to medium low and continue to cook till onions are deep golden brown another 5-10 minutes. Stir in thyme leaves and remove from heat. Place in a bowl to cool.
  • Preheat oven to 400 degrees F.  Adjust oven racks to upper and lower thirds of the oven. Line two baking sheets with parchment paper.
  • Combine both cheeses and diced prosciutto in a bowl.
  • Remove the thawed puff pastry from the refrigerator and on a lightly flowered surface roll each piece out to a 9×14 rectangle
  • Place each piece of puff pastry on its own baking sheet and poke all over with a fork. Cover with another piece of parchment , followed by a piece of foil and place another baking sheet on top of the foil covered puff pastry to prevent it from getting too puffy.
  • Bake in the oven for 15 minutes; remove the top sheet pan along with the parchment and foil. Continue to cook another 5-8 minutes until it’s golden brown, you can flip it over at the point if you notice the bottom is darker. Remove from the oven.
  • Drizzle each flatbread with olive oil and spread with 1/2 of the onion mixture, sprinkle each with 1/2 of the cheese and prosciutto mixture, put back into the oven and cook 5 minutes until cheese is melted and starts to brown in spots.
  • Remove from oven, sprinkle with fresh nutmeg, salt and pepper. Cut into desired pieces and serve hot from the oven.

The amount of citrus coming out of my kitchen (thanks to my weekly farmers market trips) is truly outrageous. I can’t be stopped – so if you’re anything like me, this Pomegranate Citrus Salad is the perfect recipe to use up all that fresh fruit!

When the height of citrus season rolls around, there’s no messing around here. I am at the farmers market every Sunday morning when it opens to hoard all sorts of citrus! Cara Cara oranges, Sumos, Kishus, Blood Oranges, Satsumas, you name it. I can’t get enough.

Without fail, I end up coming home with 10+ pounds of citrus on a weekly basis! You could just eat all those delicious fruits plain, but you could also turn them into a Citrus Salad that will rock your world!

Hello! Are you ready for Valentine’s day? I’ve been with Mike for so long that Valentine’s day, while being a nice excuse to celebrate, doesn’t seem like much of a big deal. We were just chatting about it the other day though, and Valentine’s is huge! For fun we took a look at what restaurant reservations were open. Everything that was available was either at 4:30pm or at a random non-restaurant. So I guess Valentine’s day dinner dates are very much a thing.

If you didn’t make a reservation months in advance and are looking for a cozy recipe that says “I love you,” this garlicky brown butter mushroom risotto is it. Make it for yourself or for your loved one, just make it! Your house will smell amazing and you’ll have a bowl of super comforting, creamy goodness.

I don’t know why but around every Valentine’s day I get the urge to make risotto. Risotto is one of those dishes that seems a little fancy since it’s not something that people make on the regular. But actually risotto is really easy. There isn’t even that much stirring. Most of the stirring is at the end. Just make sure you use a wide skillet, which helps give the rice more surface area to absorb the broth.

How to make Mushroom Risotto

Mushroom risotto is simply risotto flavored with mushrooms: a creamy, Italian rice dish made with arborio rice, butter, broth, aromatics, and cheese. In this case, I cooked the mushrooms in a garlicky brown butter giving the risotto even more flavor.

Mushrooms
You can use whichever mushrooms you have on hand, but I like to use a mix if I can. If you’re using white or cremini mushrooms, slice them, but if you’re using a mix (portobellos, trumpet, shiitake, enoki, porchini), tear them so they end up with differently sized craggily bits that sear nicely.

Arborio Rice
For risotto you need arborio rice, an Italian short grain rice that has a higher starch content which helps thicken the cooking liquid and make it creamy.

Mushroom Risotto with Garlicky Brown Butter

Creamy, umami packed risotto with brown butter and garlicky buttery mushrooms throughout and on top.

Brown Butter Garlic Mushrooms

  • 1 lb mushrooms see notes
  • 2 tbsp butter divided
  • 2 tbsp olive oil divided
  • 2-4 cloves garlic minced
  • salt and freshly ground pepper

Risotto

  • 4 cups low sodium vegetable or chicken stock
  • 2 tbsp butter divided
  • 1 clove garlic minced
  • 1/4 red onion diced
  • 2 tbsp white wine optional
  • 1/2 cup arborio rice
  • 1/2 cup parmesan cheese finely grated
  • 1-2 tbsp heavy cream optional
  • salt and freshly ground pepper
  • Add 1 tablespoon butter to a large heavy bottomed skillet over medium high heat until it starts to foam and turn brown. Add 1 tablespoon of oil and half of the mushrooms. Let sear without moving for 2-3 minutes then toss occasionally, until the mushrooms start to brown and soften. Add half of the garlic and season with a pinch of salt and pepper and continue to cook, tossing occasionally, until deeply brown and caramelized, turning down the heat if needed. Remove and set aside. Repeat with the remaining mushrooms and set aside.

  • Heat up the stock over medium high heat and keep at a low simmer.

  • In the pot you made the mushrooms in, melt 1 tablespoon of butter for the risotto. Let the butter foam and turn golden, but not burn. Add the garlic and shallot and cook, stirring, until soft but not brown. Deglaze with the wine, scraping the bottom of the pot. Reduce the wine until mostly evaporated.

  • Stir in the rice and toast, over medium, until the edges of the rice start to look translucent, but the center of the grains are still opaque, 1-2 minutes.

  • Add the stock, one cup at a time, stirring occasionally, until the liquid has almost completely absorbed into the rice before adding more stock. You might not need all of the stock. Start tasting the rice at the 15 minute mark – the risotto is done when the rice is creamy and cooked through, with a tiny bit of a bite.

  • Finish by stirring in the remaining tablespoon of butter, cream, and parmesan. You want the risotto to be somewhat loose. Taste and season with salt and pepper. Stir in half of the mushrooms.

  • Scoop the risotto on to plates or into bowls and top with the remaining mushrooms. Enjoy immediately!

You can use whichever mushrooms you have on hand, but I like to use a mix if I can. If you’re using white or cremini mushrooms, slice them, but if you’re using a mix (portobellos, trumpet, shiitake, enoki, porchini), tear them so they end up with differently sized craggily bits that sear nicely.
I topped one portion with a soft sous vide egg for an extra bit of oomph and creaminess.
